After the African Donut, here is the recipe of the famous donuts « Sfenj », a very popular specialty in the Maghreb countries.
10g of baker’s yeast
60cl of warm water
250g of flour
250g of very fine semolina
½ cc of salt Oil for frying
Preparation of Algerian Sfenj:
Step 1: In a glass dilute the yeast with 25cl of warm water.
Step 2: Mix the flour and semolina in a salad bowl. Form a well and pour the yeast little by little; Then add the salt.
Step 3: Knead while adding 25cl of lukewarm water.
Step 4: Work hard on the dough by sprinkling with water from time to time. Let stand 5 minutes. Then resume kneading for at least 20 minutes to make the dough soft and elastic.
Step 5: Put the dough in a salad bowl, cover with a cloth and let it swell in a warm place for 1h30. The dough must double in volume.
Step 6: To form sfenj, oil your hands, take the equivalent of a large egg dough. Make a hole in the middle and then pull the edges out.
Step 7: Dip in hot oil and fry until browning sfenj by turning them regularly. Continue until the dough is gone. Serve hot, sprinkle with sugar or with honey. !!!
